Dulce de Leche

Dulce de leche, or caramelized sweetened condensed milk, is a staple for desserts, pastry fillings, or as a scoop right out of the can South American favorite.

Prep Time: 3 hours,

Ingredients:

  • 3 liters milk - (1 liter = 4 cups)
  • 800 grams fine sugar (1 gram = 0.35 ounces)
  • 2 full tablespoons vanilla essence or 1 vanilla bean
  • 3/4 teaspoon sodium bicarbonate

Preparation:

Add the ingredients in the order above, to a large pot over very low heat. Stir with a wooden spoon until well blended and cook slowly, stirring frequently until the milk thickens and turns as caramel as you want it. This can take upwards of 3 hours.

Hint: Place marbles in the pot to prevent sticking.
