Cachapas -- Easy Recipe

Cachapas are traditionally made with fresh corn, and are a summer favorite, but this easy recipe uses canned cream corn, pancake mix and whatever cheese you have on hand. Try this simple appetizer for a taste of Venezuela whenever you like.

Ingredients:

  • 1 lata de crema de maiz (14 fl oz, 398 g) -- I can creamed corn
  • 3/4 taza de mezcla para panquecas -- 3/4 cup pancake mix
  • 1/4 taza de harina de maiz - 1/4 cup corn meal
  • 1 huevo - 1 egg
  • 2 cucharadas de mantequilla derretida - 2 tablespoons melted butter or margarine
  • 2 cucharadas de azucar al gusto del consumidor -- 2 tablespoons sugar, or to taste
  • Queso de su preferencia - slices of cheese of your choice

Preparation:

Mezcle todos los ingredientes en la secuencia indicada. Preferiblemente en una licuadora. Deje reposar por 5 minutos.

Caliente un budare, o un sarten con teflon. Luego añada una porcion sopera de la mezcla sobre el sarten. Como si estuviera cocinando pancakes.

Acompañelo con un trozo de queso de su preferencia.

Blend all the ingredients in the order listed. Let the batter rest for 5 minutes.

Heat a non-stick frypan and drop small amounts of the batter as if making pancakes.

Serve the cachapas warm, wrapped about a slice of cheese. Enjoy!
