Called a corn salad, this salad is actually corn, potatoes, olive, ham and cheese in a simple vinaigrette dressing. Served slightly warm or cold, this salad is a flavorful alternative to traditional potato salads.
Ingredients:

- 2 potatos
- 1 onion, diced
- 4 - 5 ounces ham, cubed
- 6 black olives, pitted
- 4 - 5 ounces Mozzarella cheese, cubed
- Parsley, finely chopped
- 4 tablespoons olive oil
- 2 tablespoons vinegar
- salt and peper to taste
