Ensalada de Porotos y Machas - Beans and Clam Salad

Beans and clams may sound like an odd combination, but try this favorite South American salad or side dish.

Ingredients:

  • 1 pound clams
  • 1 3/4 cups dry beans, your choice
  • 1/2 cup olive oil
  • salt and pepper to taste
  • fine herbs
  • lemon juice
  • Spanish: -
  • 400 g de porotos (Frijoles)
  • 1/2 taza de aceite de oliva
  • sal
  • pimienta
  • finas hiervas
  • 1/2k de machas
  • jugo de limon

Preparation:

Soak the beans overnight. Shuck the clams and boil the meat. The clams will change color but will not get hard. Cook the beans for an hour and a half, or until tender. Drain and cool. Add the clamss, olive oil, salt and pepper to taste, lemon juice and herbs. Serve cold.

Spanish:- Ponga en remojo los porotos el dia antes. Sobre las lenguas de machas ya limpias vierta un litro de agua hirviendo, esto las hara cambiar de color, pero no las dejara duras. Cocine los porotos por 1 hora y media aproximadamente. luego cuele y dejelos enfriar, Mezcle con las lenguas de machas y condimente con aceite de oliva, sal, pimienta y finas hiervas
