Pebre - Chilean Pepper Sauce

You'll find this fresh pepper sauce everywhere in Chile, and you can make your own, controlling the spiciness, at home to serve at every meal.

Ingredients:

  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/3 cup water
  • 2 fresh aji peppers, stemmed, seeded, and minced or 2 serrano chiles or 1 jalapeño pepper
  • 1/2 cup chopped parsley or cilantro leaves
  • 1 tablespoon minced fresh oregano (optional)
  • Salt and pepper to taste

Preparation:

In a glass bowl, mix the oil, vinegar, water, lemon juice, chiles - more or less to taste - garlic, onion, parsley and oregano. Mix well and season with salt and pepper to taste. Let stand 2 hours at room temperature or refrigerate overnight before serving. Refrigerate between uses.

About 3 cups.
