Salsa para Asados

This sauce for beef is much like Argentine chimichurri, and can be used for any variety of meats and barbeques.

Ingredients:

  • 1 cup olive oil
  • 1/2 red wine vinegar
  • 12 cloves garlic, minced or pressed
  • 2 teaspoons pimentón (ground red pepper) or 1/2 teaspoon ground
  • cayenne pepper mixed with 1 1/2 teaspoon sweet paprika
  • 1 cup chopped parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried crushed thyme
  • Salt and pepper to taste

Preparation:

Combine all ingredients but the salt and pepper. Mix well in a blender or food processor, then season with salt and pepper to taste. Let stand 2 hours at room temperature or refrigerate overnight before serving.

About 2 1/2 cups.
