Salmon A La Parrilla - Grilled Salmon

Cooking salmon steaks with dill is a common recipe. Add a little saffron and a vegeatble garniture, and you have this tasty South American entree.
Ingredients:
  • English:
  • 1500 grams fresh salmon steaks
  • dill
  • 30 centilleters olive oil
  • saffron threads
  • 150 grams carrots, grated
  • 200 grams potatoes, grated
  • 1 medium zucchini
  • salt
  • freshly ground black pepper
  • Spanish:-
  • 1500 gramos de lomo de salmón fresco
  • 1 manolo grande de ramitas de eneldo
  • 30 centilitros de aceite de oliva
  • unas hebras de azafrán
  • 150 gramos de zanahorias frescas ralladas
  • 200 gramos de papas ralladas
  • 1 calabacín mediano
  • sal y pimienta molida
Preparation:
Cut the salmon into serving size pieces, Slice the unpeeled zucchini into thin strips.

In an oiled saute pan, stack the salmon, zucchini and dill. Salt and add saffron to each stack. Cook over low heat until the salmon changes color. Do not overcook.

While the salmon cooks, add the rest of the oil and cook the potatoes and carrots with salt and pepper to taste.

Serve the salmon steaks with the potato/carrot mix on the side as soon as the salmon is done. Serve very hot.

Spanish:- Cortar los lomos de salmón en trozos medianos. Cortar el calabacín, sin pelar, en rodajas muy finas. Montar las porciones una encima de la otra. Colocar en medio una capa de eneldo picado. Cubrir el fondo de una sartén con 10 centilitros de aceite de oliva y asar los trozos de salmón, añadiendo sal y dos hebras de azafrán a cada porción de pescado. Para controlar la cocción, probar con un tenedor, el pescado esta pronto cuando el corrazon de la pulpa cambia de color, un minuto más y sale seco. Al mismo tiempo, calentar el resto de aceite en una otra sartén y freir la guarnición toda a la vez. Servir bien caliente.
